Re-sharpening Your Knife
How to keep your blade in it's best condition
To properly sharpen your knife, follow the steps below:
1. Hold the blade at the correct angle.
Hold the blade at approximately a 10° - 15° angle against the sharpening stone.
2. Push the blade away from you.
Push the cutting edge away from your body, as if you are trying to shave a thin layer from the surface of the stone. Maintain the same angle throughout the entire stroke.
3. Sharpen the full length of the blade.
Begin at the heel of the blade and smoothly work toward the tip in one continuous motion.
4. Repeat on the opposite side.
Turn the knife over and repeat the same number of strokes on the opposite side to maintain an even edge.
5. Continue until the edge is sharp.
Alternate sides as needed until you have achieved the desired sharpness.
Tip: Use light, consistent pressure while sharpening
